CalculateUMatrix should require at least two peaks

Description

If no indexed peaks, CalculateUMatrix fails. But one needs at least two non-collinear peaks to get the correct U matrix

Checked if there are enough non-collinear peaks. Refs #4245

Works with 2 or more peaks. Fails with 1 or 0 peaks.
