Make Stitch1D inherit from DataProcessingAlgorithm

Description

Stitch1D currently inherits from Algorithm. Therefore, it is not possible for end users to inspect its inner workings using the nested history.

As a test. Run the CreateTransmissionWorkspace algorithm with two appropriate input workspaces (uses Stitch1D) expand out it's history and ensure that the generated scripts can be executed in their own right to give the same result.

Testing

After discussion with Owen Arnold, it's been decided that this would be better handled by simply logging useful values, which is being done in #10614
