[ICAT] Update documentation with Facilities info

I need to update the documentation to allow the users to change the catalog mount point, and endpoint to other versions of ICAT if they wish.

I think a bit more of a verbose example of how what happens during the translation would be helpful. Anyone needing to change the prefix should then be able to follow the example.
