Fix error in ARCS and SEQUOIA geometry

Description

The specification of the source (moderator) in the ARCS and SEQUOIA geometries is incorrect. This needs to be a component.

Confirmed that changes are updated in the shipped version of Mantid. Confirmed that the instrument view shows the instrument correctly with the moderator defined as it should be. Verified in #5882
