MantidMatrix objects take too long to appear

Description

Even for small workspaces, double-clicking on the workspace entry takes a few seconds to display the matrix. This used to be much faster.

(In [4459]) It was slow because of min and max y values calculations. Postponed this to just before plotting. fixes #1211
